Worth The Time- What To Consider When Picking A Job

Job hunting is exactly that- job hunting. When you are seeking a job, you are looking for one that’s the right fit for you as much as employers are looking for the right fit for their business.

Interviews are a two-way process. If you’ve been job hunting for a while, it’s easy to start letting desperation and panic creep into your search. Take a breath, and try to keep calm- desperation to find any job can land you somewhere miserable, and missing out on opportunities you might enjoy (and that might pay) better.

I’ve already written a list of the “red flags” to look for at bad jobs, so this post is a few of the “green” flags that earn a job a more considered look from job-seekers.

Remember, this list is not comprehensive and you should always go with your gut. Your goals and priorities are your own- make the moves that get you closer to them!

Paying the Piper- The Culinary Brain Drain

You can feel it all around the United States. With the massive push of vaccinations and the slowly declining COVID-19 case numbers, restaurants and venues are starting to relax their requirements. People still need to wear masks, yes, and social distancing is still a thing- but you can eat inside now. You can sit with friends. You and your buddies can, within reason, go out and grab a beer just like you used to. We are starting to get back to normal after a year in a plague-ridden Hell of our own creation.

Not all industries are ready though:

Hey, I need to hire two line cooks ASAP! Anyone give me any leads?”
Guys, I’m desperate. I need a dishwasher, a busboy, and at least three cooks NOW- the restaurant is packed every night and I can’t take it anymore!”

Why can’t I find capable help anymore?! Everyone I hire either flakes out, burns out, or just quits! WHAT HAPPENED TO ALL THE COOKS?!”

They found greener pastures, folks. They had no other choice. We need to raise a new crop of cooks from scratch- maybe we’ll be smarter about it this time.

You’re More Qualified Than You Think: The Case for “Soft Skills” In The Kitchen

On paper, I am not qualified for my own job.
In the bakery, that is. The good thing about being a blogger is that, working for myself, I’m always the best (only) man for the job. In the bakery, though, I am technically not qualified for the position I hold, but I’m there and I’m pretty good at it for reasons that don’t easily show up on paper.

Pies, Omelettes, and Skill with the Simple

I had been in a depressive slump for a few days. Life for me was less a series of deeds and events than a monochrome shamble from one checkpoint to another.
But when I got home to a quiet house with my wife taking an afternoon nap, I knew the fog was lifting- because I wanted to make some pie.

I weighed out the flour and cut the butter. A small measure of iced tea was poured for the liquid. Regardless of my state of mind, my hands still had the skills. The ancient wisdom still flowed through them, and they knew without my correction how to create something good. It was the quiet, meditative serenity of letting my hands move while my mind watched and convalesced- shaking off the lead cloak Depression had thrown over it.

Reconnecting to something simple, delicate, and pure.
This is the space where I think people show their true skills.

4 Reasons Why EVERY Industry Should Be Hiring Kitchen People

Good evening, friends and neighbors.

Honestly, so much of this week as felt like people trying to find the slowest possible way to rip off a Band-Aid.

As I write this, work at the bakery is slowly becoming more dire. Our staff AND wholesale contracts are dwindling, and it won’t be long before I receive a call that- arguably- should have been weeks ago. A call saying I should stay home for the time being, and perhaps find other work.

I wouldn’t be alone, to be sure. An enormous chunk of the current record unemployment claims are culinary and service staff, trying to figure out where to go next.

Fortunately, whether we all realize it or not, our experience in the kitchen has drilled an assortment of hard and soft skills into our minds- and those who used to look down on “burger flippers” would be wise to hire us while they can.
